Organic Pasta — Spaghetti

Our organic pasta is made from a variety of grain called "Senator Cappelli." No, we didn't name it. Yes, that's really the grain's name.  On the verge of extinction, some farmers from Puglia saved the grain.  It is ground in traditional stone mills to a very specific consistency that makes the pasta very easy to digest.  While not gluten-free, studies have shown that those with gluten intolerance can enjoy this pasta, and it's great for diabetics for the same reason.  Best of all, it's certified organic!

This year we are featuring orecchiette pasta (little ears) a very traditional shape in Puglia.
