If you’ve never heard of Prosecco, it is Champagne’s Italian cousin.  Light and bubbly, most people are probably familiar with using it to make Bellini cocktail.  Today, this premium sparkling wine has overtaken Champagne in global sales.

The name Prosecco is derived from the Italian village of Prosecco in the beautiful area of Trieste.  In fact, the region  Le Colline del Prosecco di Conegliano e Valdobbiadene was just named a UNESCO World Heritage Site in 2019 due in large part to the region’s role in the production of Prosecco.

This Prosecco Vinegar is hand-made in the ancient wine cellars at Villa Cappelli. It has all the wonderful complexities of our other artisanal vinegar but with a pleasant, slightly sweeter finish.  Its light and fruity flavor pairs well with any food.  Of course, it is delicious on salads.  And it’s perfect sprinkled over grilled fish or vegetables.  Use just a splash to deglaze your pan after cooking up some chicken, and you’ll have a nice, bright sauce ready to go.
