Why are recipes dumb?

Well, like most Italians, we don’t like to measure or get too specific when cooking. Have you ever tried to get a recipe out of your mother or grandmother? Her: “Add some onions.” You: “How much?” Her: “Enough. Then add some garlic.” You: “How much?” Her: “Enough to make it good.” Thanks! But that’s the FUN of cooking. You explore, you taste your food as you go, and you add what you need. Sure, there are instructions and amounts, but we try not to be too specific unless we need to be so that cooking — and food — can become less stressful and more fun!
